1. Carioca hot dog
The first recipe is for the famous carioca hot dog. Follow how it is made.
Ingredients
- 1 kg of specific sausage for hot dogs.
- 6 cloves of garlic.
- 3 tablespoons of margarine or butter.
- 30 g of bacon.
- 1 box of tomato sauce .
- 1 spoon (tea) of sugar .
- salt August.
- Black pepper August.
- 4 onions cut into rings.
- 4 tomatoes cut into slices.
- 1 bell pepper cut into very fine pieces.
- Water to taste.
To assemble the hot dog:
- 1 can of corn .
- 1 can of pea .
- 1 pack of straw potato .
- 1 package of grated cheese.
- 300 g of raisins.
- 19 French breads.
- Ketchup.
- Mustard.
- Mayonnaise .
METHOD OF PREPARATION
FOR THE SAUCE:
- Remove the skin from the bacon and cut it into cubes. Place this shell in a pan with 1 tablespoon of margarine, with the intention of releasing the fat from the shell over a very low heat. When you've loosened enough, remove the shell and throw it away.
- Place the bacon cubes in the pan until golden with the rest of the margarine. Then add the garlic and then the sausages so that they are at least a little golden.
- Once the sausages are browned, remove them from the pan and add the peppers and tomato sauce little by little. Add water little by little until you see the consistency of the broth and finally add sugar, salt and black pepper. Let it boil.
- Lastly add the tomato and onion.
TO ASSEMBLE THE HOT DOG:
- First open the bread and put the sausage and sauce.
- Now, add ketchup, mustard, mayonnaise, corn, peas, raisins and, lastly, straw potatoes to taste.
2. Filet à Oswaldo Aranha
Ingredients
For the fillet:
- 1 kg of filet mignon;
- salt to taste;
- 1 tablespoon (soup) butter;
- 1 tablespoon garlic, sliced and fried.
For the egg farofa:
- 1 spoon (soup) of butter ;
- 1 chopped onion;
- 4 eggs;
- 2 cups (tea) of cassava flour ;
- 1 tablespoon (soup) of chopped parsley;
- salt to taste.
For the rice:
- 2 tablespoons of butter;
- 2 cups (tea) of boiled white rice ;
- Chopped parsley to taste.
For the potato:
- 2 sliced potatoes pre-cooked and cut into slices;
- hot oil.
METHOD OF PREPARATION:
FOR THE FILLET:
- Cut the meat into thick fillets.
- Season with salt to taste.
- Melt the butter in a skillet and brown the fillets.
- This dish is served with fried garlic on top of the fillets.
FOR THE EGG FAROFA:
- In a skillet, melt the butter and sauté the onion.
- Add the eggs and mix well.
- Then put the cassava flour and season it with salt and parsley.
FOR THE RICE:
- In a skillet, melt the butter and add the rice.
- Season everything with salt and parsley to taste.
FOR THE POTATOES:
- Fry pre-cooked potatoes in hot oil.
